Avocado Double-Chocolate Brownies

Alright, so the title probably makes you think I have gone slightly crazy. And maybe I have.  But seriously, these are soooo creamy and taste surprisingly rich-chocolate, smooth, delicious!

And honestly, the SuperBowl has me slightly concerned, so a bit of a chocolate pick-me-up was in order. 

The concerns are really two-fold:

1. The game is actually going to be intense. I am a Pats fan (major heart for Mr. Brady...with about a billion others) and so of course I have a lot of emotions invested into the game! And it doesn't help that majority of my guy friends want them to lose just for the fact that I like them! So its a lot of pressure for my boy! I know he will pull through. We chatted earlier this week about it.

2. The menu for Sunday is starting to get sliiiightly out of hand.

I don't even know where to start. You seriously can't just pick one thing to make, because the options are endless. Adn unless you are feeding about 50 people, its hard to cook everything you want, and then not eat it all, and still feel as though you have clear arteries.

How I'm going to choose what actually gets made, I have no idea! 

So for now, I am going to take a mental break, have a brownie and contemplate what the perfect SuperBowl menu should be. 

This is a creamy-dreamy moment.

Recipe: Avocado Double Chocolate Brownies

Ingredients:
1 medium ripe avocado
3 eggs
1/2 cup unsweetened cocoa powder
1/2 cup brown sugar
pinch of salt
1 tsp vanilla
1/2 cup (good) dark chocolate, coarsely chopped

Directions:

It's so simple, throw it all in the food processor (a bit at a time)!

In a food processor, blend the avocado until smooth. Add the eggs one at a time until smooth. Add in cocoa powder, sugar, salt, and vanilla until just combined. With a wooden spoon stir in the dark chocolate.


Pour into a 9x9 pan and smooth out the top.

Pre-heat the over to 375 F and bake for 20-25 minutes.  Allow the brownies to cool before serving. 

Ok confession time: I don't have a 9x9 pan so I used a pie plate, and then cut them into pie slices. I know! Who bakes and doesn't have a 9x9 pan!

  1. Just made these for a pot-luck. I am grateful for MaiTreat when I have avocadoes and cocoa powder and want something gluten-free and yummy!
