Classic Peanut Butter Cookies


If it makes you happy, it can't be that bad. Right? Yes, thank you Sheryl Crowe. So here is my thought. If you make it at home, it can't be that bad. Right? Yes, thank you MaiTreat!

But really, when you make something yourself, you know exactly what goes in to it. You control everything. There isn't some weird preservative to extend the shelf-life, you can take out ingredients that you don't like (raisins always seem to get a bad rap...), and best of all you put a bit of your love into it. Remember though, if you lick the spoon while you are dropping cookies on to a pan, you are also sharing that little extra love with whoever is lucky enough to receive a cookie. No one really wants to get that type of surprise, but then again, who will ever know. Right? Our little secret.

Classic Peanut Butter Cookies
yield: 2 dozen

1 cup natural peanut butter
1 cup coconut palm sugar
1 egg
1 tsp vanilla extract

Directions:
1. Preheat over to 350 F. Spray a cookie sheet with cooking spray or line with parchment paper.
2. In the bowl of a mixture combine all ingredients until smooth.
3. Roll balls of the cookie dough in your hand until smooth. Gently press cookie down to flatten and then add criss-crosses with a fork.
4. Bake for 10-12 minutes. Cool on a rack for 5 minutes.

Simple.

  1. Yes the look sooo good. I was just in the mood so I went to Quality Foods hoping to get coconut palm sugar but no luck :( i gather you have to go to the health food store or maybe it's just this town?

    1. I buy mine at bulk barn (yes!), but I know a lot of the health food stores/nutrition stores have it too. Hope you can find it!

  2. Yes I hope so too. But in the meantime I'm moving onto the apple tower for dinner tonight. I have a dozen apples ready from the backyard.
